If you near a door or hatch that you can slice through press triangle and when you are in the middle of slicing press down. The weapon indicator will not be there but when you are done slicing it will reappear press down again and the indicator will disappear again now if you press the fire button Jango's wrist will glow with a blue light. You can switch to a weapon even after you do this.

On the last level of chapter five 'favoure for a hut' when fighting the big Kryte Dragon thingy you should notice that the only weapons that can hurt the beast are the lasers and fists (you probabley didn't know about the fists bit, ha ha!). So when you fight the dragon at the beginning just go up to it and punch it to death(this is quite hard to do but somtimes the dragen just sits there like a dope).

Once you kill the dragon Jango goes to the end of the level. The only bad thing is that at the end you still don't have any guns.
