To do the Ultimate Grapple moves, you go on doing a Strong Grapple and after the grapple connects press R3 (which is the right analog stick when you press it down) and you will see a different menu for moves. It will show you different motions to do with the right analog stick. Experiment with the different motions and you will soon learn the moves by heart.
