Jinpachi is actually easier with normal rather than easy and try doing cheap shots maybe changing the rounds to 1 might help, don't get to close to him when he shoots fire because he will shoot 2 out, it took me 50mins with panda and I found out a good cheap shot and did it in 20mins with kuma

Try to play only one round and make the time very small. This is the easiest way to win.

Try to learn as many combos with Jin and then try to hit Jimpachi as much as you can on his legs, it wont make bid damage, but this is how it worked for me.
