Guy with big green hat: Pretty stones from dig site
Retro Kid (blonde hair with blue/white outfit): Coins/statues
Murry: Money and any type of food
Hugh: Milk (little kid) Coins (when he is older)
Hugh's dad: Milk
Chris: Flowers
Kate: Flowers
Guy that runs inn: Fish and eggs
Ruby: Flowers
Nina: Flowers
Nina's husband: Fish
Carter: Milk or eggs. (you don't have to give him anything if you help out at the dig site daily)
Van: Eggs or Milk or Fish
Girl at dig site: Things you grow (all I know is oranges)
Kate's Mom: Flowers
Kate's Dad: Fish, milk or eggs
Takakura: ?
Mukumuku: Fish
Griffin: Eggs or milk?
Muffy: Flowers or pretty stones from dig site
Celia: Flowers or eggs or your cooking
Vesta: Flowers

If you arn't sure what a woman might want she will accept flowers (except for nami)If you arn't sure what a man might want he will accept eggs (usually) or fish (usually). I think I covered every one...Im only in chapter 3 so I dunno if there are more characters later. PS: If people turn their heads to look at you when you pass them by, that means they are your friend. If they keep on walking and don't look at you, keep giving them gifts every day. You can only give people gifts if they arent working. Cody will only accept gifts after 6pm. Muffy and Griffen will accept gifts when they are working in the bar though. Kassey will accept gifts when he is in the bar at 7. Patrick will be by the well outside around 8.
