All you need to do with the Star Key is to keep it in your inventory. This key will allow you to access areas in dungeons that were previously blocked off before (because of the star barriers).

For example, the Sindain dungeon branches off on one of the levels, where you can take the star barrier exit instead of the normal one to access new levels of the dungeon.
