Square = Steal, Right Analog Stick = Steal
You stand in front of him as close as you can, and press Square or move the right Analog stick. You have to do it a couple of times to steal it, when it falls out of his hands run for the ball and get it before the opponent to make a steal.

Correction, in order for the steals to count, you have to do the grab steal (right analog up+right or up+left). Get close and keep trying. When his anklebreaker meter fills up, back up untill he's done with his moves then get back on him and continue the process.
