For really tight turns you need to slow down about 3 metres before you have to turn.
For turns that aren't too bad you can just hold x and turn, but sometimes you have to tap x for turns.

Just keep on the accellorator and stay in the middle of the road. Oh, and if you want to see something sweet, in one of the motorbike levels, there's an alien crossing sign. Crash into it to get to a jetski level.
