I like the Teutons because they have Teutonic knights that are really powerful at close combat and I like islands and team islands because the only way you can be invaded is by boat

I'd have to say either the Bretons (longbowmen can outrange even castles, which is sexy), or the Byzantines (excellent technology tree, and cataphracts are always nice for running down groups of archers, thanks to the trample damage they get in Conquerors' expansion).
But if you're including Conquerors' expansion, then my favorite race is EASILY the Spanish, thanks to the early gunpowder units (conquistadores) and fast-moving monks (missionaries).
As for favorite map, I like Highlands quite a bit because of the river with one strip of shallows across it; once each side sets up their defenses on their respective ends of the shallows, they kind of leave each other alone (except for the occasional raid) and both end up getting pretty big and powerful, and it's a lot more fun that way.

My fav civilisation is the byzantines cause the technoligie they have can give you ahuge advantage over others like the saracens, but vikings onteam island is a mean combo too

My fav map is arpoligio because you can make those randomly placed mini islands your little resource/a place to send soldiers to attack instead of going the long way from the island you start in

Either Teutons or Mangudia and my favourite map would have to be black forest because it is easy to defend on and easy to luch sneak attackes.
