I have a Lv.36 Staraptor and a Lv.38 Flareon. My other Pokemon are currently all 40+. Well... They're pretty easy to train. I'm only in Canalave City. I haven't even reached Snowpoint yet. I plan to make all my Pokemon at least level 40 before I challenge the next gym.
My question is: does anyone know where I can train my Fire type and Flying type Pokemon?

Use the VS Seeker around trainers who you have battled before and they may want to re-battle you. Additionally, Flareon should perform well in Canalave Gym, since the Fire type is excellent against the Steel type (just watch out for Ground-type moves), and he should thus gain a few levels from it.
There is the long and extremely boring method of defeating wild Pokemon, but I wouldn't recommend that unless you're out of options.
Also, if you haven't reached Snowpoint yet, you shouldn't really need to worry, as there are plenty of trainers along the way.
Also, on the route right next to canalave city, there are trainers (fisherman) with Gyarados, which give loads of EXP points. They might be hard to defeat, but the still give lots of EXP. Also, I believe that those gyarados don'thave any water moves, so your flareon won't get too injured.
You can use the Vs. Seeker around the 6th and 7th gyms.
You can continously battle wild Pokemon.
Lol go to enterna city and go east and use the vs seeker and you wil get like 2587 exp
