How do you get the mirror courses if you dont have a memory pack?

The same way. I have no memory pack and I have all the Mirror courses.

You don't need a memory pak to get the "mirror" setting. Simply collect all gold trophys in all cups in all engine modes (50cc, 100cc and 150cc).
At least me and my brother didn't.

You need to achieve gold trophys on every cup for 50cc, 100cc, and 150cc. In the grand pri mode. I don't think I have a memory pack and Im pretty sure I did it so you should be ok. Its really cool actually, try doing toad's level with the cars! Its really hard!!!

Race on every race course and win gold in all of them. Then the start up screen will change (it did for me) and you will have the option of racing the courses backwards.
