Were is the button to turn off the waterfall in hailfire peaks(fire side)to get to the jinjo?

I don't think there is a button to stop the hot waterfall. Have you tried jumping through while using a Gold Feather?

Or you might need to use the Shack Pack ability while using Banjo to jump through.

Well I had this problem too.There is actually no button. So I found this Jamjars that tells me about an ability that will let you "submerge yourself in dangerous liquids" (like hot water(wink wink nudge nudge hint hint)) What you do is get Banjo alone and crouch. Then, while continuing to crouch, press C left and keep holding Z. This will allow you to walk right in/out of the hot water!!! ()()
