I've built floor 104...is there anything else, besides floor, to buy with coins?
Gambling uses chips, and everything else uses bucks...
What happens to the coins?

Well, there’s not many big things you can spend coins on besides floors, but it does cost coins to employ bitizens (the cost is more the better they are at the job) and even to begin to restock a floor.
