Usually you just use them to sell for more money unless there is something else when you get to a higher level

Those are your products too. You can sell them in the factory (truck orders) or in your Roadside Shop!

You can use the bars to make jewellery, but you need to have purchased and built the jeweller first. You can also use them for truck orders, which will earn you vouchers, Coins and XP. Jewellery can also be used for truck orders, and sells at a much higher price. Selling the bars alone won't fetch much profit considering how long it takes to make them.
