I've noticed during the transfer season, some teams make offers on players I didn't put a status for, in other words, ones I don't intend on selling. How do I do this? I tried the search but it doesn't bring up any team or player I searched. Also at the bottom in the 'status' section it doesn't give me the option of 'any'. Help!

On FIFA 12 players who have no " status" can have offers placed but not very often. When you do this the status says none so that means the players is not intended to be sold but offers will be looked at by the club. For example I placed a bid for messi but Barcelona did not intend selling him however I still signed him

Players from all squads can have offers placed by other clubs so you can have offers for your players by other clubs and you can do the same. The status option any is normally shown as none

Search for players with "any" selected for status (all the way at the bottom. You have to do it one league at a time, but this way, you can see all players and make an offer on anyone you can afford. Sometimes, teams will refuse any offer, especially when you have buckets of money, but depending on the situation, you can buy just about anybody like this.
