There are actually 8. Four of them are required to do,they are the woodfall, snowhead, great bay, and stone tower temples. The other four aren't required but if you have all mask, you can do 4 more optional dungeons at the end when you are in the moon. Do those for a full heart container per dungeon and finish all four to get the Fierce Dierce deity mask 
Then Fight majora. (Bring along milk that gives unlimited magic, forgot the name. Drink it before wearing the fierce deity)

There are 4 temples in the game - Woodfall (Deku Scrubs), Snowhead (Gorons), Great Bay (Zoras) and Stone Tower (cursed land of Ikana).
