I know that chao die arter a real long time, but when it does, will it have the same stats that it had before it reincarnated, because I have 2 chao who have everything in stats MAX, and have another who is almost 2 ?

After it reincarnates all it's stats will be at level one yea I know it sucks
It's stats will be 1/5 of what they were before. My first chao had around 1000 in every stat and when it transformed it had around 200.
