This is just my opinion so don't hold me to it.
Human-paladin(especially if you know double sword and equip two arch swords!)
Bangaa-defender
Viera-sniper/or assassin
Nu Mou-illusionist
Moogle-black mage

My party is marche a paladin w/ two arch swords, bangaa a defender w/ eclipse, nu mou illusionist with ALL abilities, montblanc a time mage with ALL blk magic,
Human a fighter w/ ALL abillities and the two avyuirs, and ritz as a archer with persues bow. Now their only lv 32 average and whoop ass!

Ok for human the best combo I've came up with and works wonders in a pich of a tough battle is ninja and fighter skills it's awsome get them to learn double sword for ninja and strickback from fighter and hardly anything can tuoch you except magic, and archers.

First is first, it depends on how you raise the character, each time you level up in a certain class you gain stats based on that class, example is a human as a black mage the whole game changing to a phisical damage class like fighter will do bad damage because he's been gaining magic damage and minimal phisical damage. Another thing is with ultima or without? Ime just gona say without due to its limited times of use in battle.

Human: Probably any phisical damage class with doublesword, palidan (due to high damaging weapons and good armor) raised as ninja or fighter for high attack. With ninja for a status effects or fighter for ranged damage. Blue mages when used right also are very potent.

Bangaa- Dragoon/templar, if you want spears have templar first for better armor, if you want sword dragoon first, theres a sword with 65 attack before the end of the main story line. Dragoon raised for highest attack in the game with cone attack and lifesteal with templar for heavy heavy armor and anti magic skills. Also one of the best Reaction abilities dragon heart, whenever phisicaly hit you get autolife. (revive when dead at half health)

Viera: If you want magic, Summoner/redmage I prefer with the accuracy from archer so you have very high chance to hit even from the front, arguably one of the best mages in the game if not the best due to doublecasting very powerful spells, also brings some support. Assassin/archer? due to highest combined magic attack and phisical attack per level for great attacks in both schools with archer for that annoy the mess out of the enemy team and away to get past react abilities.

Nu Mou: This ones trickey, Nu Mou have many viable classes, Morpher can be usufull because they can become whatever you want for the fight. Illusionist have the highest magic damage in the game and can hit all enemies for a decent amount of damage. With alchemist providing insian amounts of damage with some nice support and status effects.

Moogle: They sucks, sorry to say, mediocre stat gains, sadly you have to have one, I reccomend if you ever use one as a time mage for the support and gunner for status effects on enemies at huge range. Gadgeter for fun. Potentialy odly enough they could have huge stats but its completely up to luck, Montblanc since you must have at least him is suggested to do this.

Also remember even though something has ultima it doesn't mean its the best choice. Does 3X phisical damage so not good for magic classes and cost virtualy all the mana for a phisical class or are not even usable until much higher levels, due to the 60 MP cost. (around level 20 you have maby 40 on a phisical class)

I know this is a really old game but the best class has to be Paladin with 2 Excalibur 2' yesh 2 Exclalibur 2's you can get 1 from a quest but I found out a way to get like 9 or 10 Excalibur 2's if you have patience just you need a lot of Red mages and Juggler who have catch mastered :P In the Mission in some Jagad Killing Hanzo ( a Ninja) all the ninja;s in pary throw Excalibur 2's Just keep the nunja's alive and stay far away they will eventually throw it =D with that a Paladin can do 500 or 600 damage >:O
