Because, think of the possibilities: something way, good like..you said blue-eyes? Well, what do you think would happen if yout opponent was a low-player that didn't have anything good? Maybe their best atacker is like..flame cerebrus or sumtin 21 like dat. And all they're trying to do is stall you by killing all you're 2000 defenders. What happens to the duel if all of a sudden like nutin was happening, you switch all you're monsters into attack and lay a blue-eyes? Genocide, that's what. The same as when you have the cards in real life, if you do, and you went to duel them in real life, you are not allowed to summon a powerfull monster without sacrifices, depending on the level of the monster. Understand? You would either be unstopable, or the computer would do the same thing, and you wouldn't win one duel for the whole game. Either way, noone would play the game, they would spread the word about such a boring game, and not one person would even buy the game anymore. Konami, or whoever the company is that had made the game, would lose money until it shut down. Therefore, they make little rules that say nothing powerfull can be made instantly.

When you grow up in the game you will discover that instead of having to sacrifice 6 monsters in order to summon 3 Blue Eyes so you can use Ultimate Dragon to special summon Blue Eyes Ultra Dragon; if you have Blue-Eyes Ultra Dragon in your deck, you can summon it with just 2 tributes, the same amount required to summon 1 of the 3 BEWD it's made off.
