To use the struggle submission system, simply lock your opponent in a struggle submission and push the right thumbstick in any direction to "lock the submission in".
To escape from a struggle submission, I find moving the right stick up and down quite fast to be an effective method, although others find rotating the right thumbstick in the driection shown in the bttom right hand corner of the screen when a sturgle submission move has been applied but not "wrenched in" to be more effective.
