If easy then just smash them.
If nightmare mode then hold triangle (you need 5 blue souls) then when he says: ready? Then use it on one of his monsters and then keep pressing triangle and when it are turning red (or are close to) then use one soul when the screen turns black then keep pressing triangle (do this until you don't have more souls) then allot of them should be finished in some seconds (if not then just throw the enemies.)
