Sell items by catagories like when you press the buy mode to you will see a icon that show a chair sell some kind of furniture.

Virtually any type you can think of. You can sell anything in the buy catalog, use the business wholesale mode though (for the discount). If you put out electronics to sell then you have an electronics shop. Art=art store, junk=junkyard, cars=car dealership. The crafting shops are: flowershop, robotics shop, toy shop, bakery, and lemonade stand. I don't know why but a hairstyling business can't be run at home, but I hear there is one (I haven't had my sims purchase a business lot yet.) Oh and there is the entertainment business area: nightclub, gym, etc. Oh yeah, there's a restaurant business too, but only at a business lot; a food store can be run at home, but customers can't pay and then eat the food at the home business.

As for how to run them, I can only speak for home businesses, I haven't tried an away from home business yet. For any type of store just buy the needed items: register, counter to put the register on, display shelves to put the items on, an open/closed sign. Use the phone or computer to open the business, use the sign to open/close the shop. For a shop that sells crafts, you need to actually craft the flowers, food, toys, and/or robots so buy the appropriate crafting station. Once a sim crafts items, the items are in the owners inventory. Take the items out of inventory and place them on shelves. Or in the case of large robots they can be placed on the floor. They have to be marked for sell by using the price mode.

For an entertainment business all you have to buy is the opeh/closed sign and ticket machine in addition, of course, to the appropriate entertainment objects.

Anyway, your question about how to run each business is really vague and I'm tired of typing so if you're confused or need info about a particular business then you'll need to be more specific.
