There are 54 customers altogether including closers (the picky customers), Jojo (the food critic) and Papa Louie (the owner). You unlock customers as you go further in the game and improve your rank.
You should get closers everyday, Jojo every week (CHEAT - the day after pay day) but Papa Louie will only come you have reached Gold Star Customer with ever customer. Happy Gaming!
