I've noticed that animals will only move on top of signs. So don't plant anything near them, especially exotic fruit and rare flowers. When an animal moves ontop of a sign and leaves, only the sign is left behind. I've lost a few coconut trees and countless flower with this mistake. By the way, you can only have eight animals in your town, so if one moves, you can save your flowers, trees unfortunately can't be saved.
