A good strategy is to try and attach blocks to every side of the hotel before before building up as towers can be eaisily toppled when the bottom-most block is destroyed.

Test yourself by replaying levels with different blocks.

If you place towers beneath the ground they won't protect your hotel but they will stop it from being destroyed.
