Provided you mean the Moblins when you say "guards," then attack them with projectiles. The hookshot works, so do arrows and bombs. The giant Moblin with the club must either be attacked with arrows or your sword (dodge the attacks and get behind it).

The giant guard with the club is so annoying!! He is also the easiest to kill. -(insert evil laugh here)- Just stand far enough away so that he can't hit you with his earth-shattering club of death and pelt him with arrows. Aim with care ;) He'll go down in no time.

As for the rest of them, just face the corner of any wall in the maze and press Z to rotate your camera angle, making sure to avoid letting any limbs stick out too far, but far enough so that you can see around the corner down the adjacent passageway. Wait for the giant to walk the opposite direction from you, walk out slowly, and either let your deadly arrows fly, destroy him with your slingshot, torture him with bombs, whatever suits your style.
(DISCLAIMER- there is one guard, if I remember correctly, that does not turn around, but turns and walks down the passageway to his right/left instead. Use caution!)

This whole process can get tiresome if repeated over and over, so I really suggest that you barrel through the Forest Temple as quickly as possible. It's fairly easy, and if you must leave, Farore's Wind is strongly advised.

They're called Moblins. And it's the Lost Woods. Anyway, hide, and when they walk past, hit them with the Hookshot/Longshot, or any kind of Arrows. Should defeat them in one hit.
