You can remove the roof from the view but not physically or actually remove the roof since the game automatically adds in the roof based upon the style you have ticked by default.
You can build a second floor on to the house and not add any walls, but that will still have a roof above it.
An alternative of you just want to have flat area above the ground floor is to put in decking over part of the roof, as that will give you a "flat" roof in the sense that it is a deck.
