For the big bridges (I assume you mean the High Importance Targets) It's a good idea to get below the bridge. Attach explosives to the support beams and detonate them, or knock them out with your Hammer. Once they're all out, go to the top and smash and blow up each end of the bridge and it should come tumbling down pretty fast.
For the big buildings, ignore the roof. Simply bash down all of the outside walls and it should crumple pretty quickly. If you're pressed for time, smash any main support beams you can find to weaken the structure and then put some charges on the roof to finish it off.
