You could always go around shooting people and robbing banks with the bandanna. That's what I'm doing. There's an achievement you can unlock if you use a pardon letter on a bounty of over $5000. Also, if you get tired of being chased by posse, you can head to the country where you don't have a bounty and find something to do there. Although, heads-up, if you head back to the country where your wanted you'll most likely be jumped by a posse, whether on horse, train, or stagecoach.
