If you one career can you start a new career without losing you're existing career?

I'm pretty sure you can start a new career keeping your old one because it did let me on Undercover, Underground, Underground 2, and Most Wanted but I'm not sure since I don't have Pro Street.

Nope. You have to erase all the other data before you start a new one.
