At the time of writing this answer, Iron Golems are not in the Xbox version of Minecraft. Iron Golems should be added in one of the next few updates.
When they are added, you build them as follows:
Build (not craft) a T made of four Iron Blocks. One on the ground, with one on top of it, and then two on the sides of the top cube. Finally, place a Pumpkin or a Jack 'o' Lanturn on top of the T. The gourd MUST be placed last. If done correctly, your build should spring to life.
Alternately, you could try to increase the population of an NPC Village. Iron Golems spawn in villages when they are large enough.
Iron golems are said to be in a few updates but is able in minecraft pc version instead of making a iron golem you could make a snow man which is a stack of two snow blocks placed on each other with a pumpkin on top then it should come alive but be careful when it as about it leaves a trail of snow this is on Xbox by the way I hope this answer helped
