hey, the easiest way I have found short of just rocket launchers is grenades (plasma and spike work best) hope it helps

In addition to that, on the hunter's there are places where you can see red matter, and it's like their skin or something. You can see this where their face should be, their stomach area and their back. I find the easiest way besides blowing them up is to snipe their face area, or get on the ground and get them to charge you and then take aim at their back with a regular assault rifle (make sure you shoot the red matter and not the armor)
