Why can't I open car trunks, I keep reading that Niko can and everyone says I can but so far I can't?

You can open them. The only way to open them is to crash the car and hope you will be lucky to get oppened.

You can close/open the trunk during one mission for elizabetha, but apart from that I don't think you can.
Why bother anyway? Theres nothing in there.

Tap them just enough to open them in another car.
Eventually you'll get good.
