I haven't had this game for too long but I think I have had it long enough to win a spell card, but I haven't. So I have began to wonder if you can actually win spell cards when you defeat a duelist. You can win them right? Is it just taking a while for me or something or is there a different/specific way to get some?

Yes, you can win the spell cards, I've only played the game a couple of times and when I choose the dark colored statue I almost always get at least one spell card.
