Ok, I figured out how to beat the droids, but how do I kill the Mandalorians by the bikes for the wookie?

You can't have any weapons on you. You must unequip all of your weapons from each of your teammates. Where ever you see dead wookies you'll find the mandalorians hiding. When they appear equip your weapons and kill them.

Good job on the droids. Just pull a similar tactic on the Mandalorians--set up mines where they'll probably appear, use all your defensive Force powers and stims, then unequip your weapons (only yours, mind--they don't care about your companions). When they appear, re-equip your lightsaber and NIL-8 them. Gather their remains, and report back to the wook for your reward. Been so long since I played I can't remember if he actually gives you something, but hey, it feels good to help him, doesn't it?
