Basically, you have to pass through one of those Accelarators and keep passing through them. Taking off into one is another matter.
Sometimes, you will get specially marked ramps which will allow you to automatically take off into the air. Sometimes though, you need to perform tricks to get into the accelarators.
If you use the analog stick to go up and down (up takes you down, down makes you go up), you can hit multiple accelators and gain more air.
It may be difficult at first but once you're used to it, Air Riding is easy.
