To decapitate enemies is really just kind of luck, but I think if you aim your bow just right you can do it.

To play soccer with their heads, I'm not sure if you can do that but its probably the same way you kick a chicken put your sword away and hit X.

When you stun an enemy, use a flourish attack and it will remove their head. To play soccer with their head, just kick it around like you would kick a chicken.
