Hey there I know what you mean. I found an incredibly easy way to do it. First get a mage summon out and have time stop on command. Keep guarding and wait for the demon to swoop down and slash at you. As soon as you block the hit, use time stop immediately. Lock on to him, and block and uppercut ONCE then wait. When time stop wears off, he will be knocked up into the air as if you only just hit him. Time your jump so that you are in the air as soon as he is and just steal in mid air. It might take a try or two to get the timing right, but once you get the hang of it, it's really easy.
