Go to the little hut "click" go to animal fact cards and buy them (get money by petting animals and save up.

Sigh... Let me explain.
The parts have nat-geo labels on them, right? The little icons?
Now, if you go to the species list, you'll be able to see that every part with an icon corresponds to one of the breeds you haven't bought yet.
Buy the breeds, and the parts are yours.
Just spam the tracking, grooming and healing challenges, get a lot of coins, and buy the breeds.
