How can I get easy expert staff ghost races?

If you mean by that, expert staff ghost data in which you can race, than all you have to do is beat the normal expert ghost staff by a certain amount of time. This amount of time varies with each course. After finishing a time trial, a sheet of times will come up, when that is showing then if you have unlocked the expert staff ghost for said course, then a note will appear saying that you did so on the bottom of the screen.
