This is how you double jump and then spin, to get across one platform to another platform. You cannot do it by a standing still position. While going the direction you need to go, press A, then A again (basically a double jump) then flick your nunchuck back and forth from left to right or spin it in a circle. A good hard flick of the nunchuck seemed to work the best for me.
