I think it's only on certan levels like:
Level 1 = ult. Humongasour
Level 2 = ult swampfire
Level 3 = ultimate spider monkey
Level 4 = ultimate big chill
Level 5 = ult spider monkey (again, no ult cannon bolt)
Level 6 = ult echo echo
Level 7 = no one...
Level 8 = way big (he's not an ult. But he is the special alien)

Also I only have the wii, ps2, and ds versions but I think that you can beat the game on the PS3 and X-Box 360 you can be ant of those aliens when ever. I know that they get fourarms for the x- box and rath for the PS3 so...

I think that the game for wii is best because you can get a cheat to unlock ult eco eco

Type ultimate life form in the cheat box then you press b 11 time then you can play ultimate (only for xbox360)
