If you want to play a particular level but don't want to play through the game to reach it then when selecting the 'New Game' or 'Load Game' options press the 'Minus' and 'Plus' buttons together.
Unlock Easy Mode - Dragon Forms:
When selecting the 'New Game' option press 2 and Z.
Unlock Hard Mode - Dragon Forms:
When selecting the 'New Game' option press 1 and C.
