When you have completed Sapphire Cup on the Rookie setting this difficulty becomes unlocked as an option.

When you have completed the indicated Grand Prix with a Gold trophy the corresponding character will become available to select.

Unlock Lanky Kong:
Complete Topaz on Rookie setting.

Unlock Tiny Kong:
Complete Sapphire on Rookie setting.

Unlock Funky Kong:
Complete Diamond on Rookie setting.

Unlock Cranky Kong:
Race him in 'Candy's Requests' - Level 3, Mission 24.

Unlock King K. Rool:
Race him in 'Candy's Requests' - Level 4, Mission 31.
