These are unlocked in the following sequence when you complete a cup.
Unlock Sapphire Cup:
Complete Topaz Cup on Rookie.
Unlock Diamond Cup:
Complete Sapphire Cup on Rookie.
Unlock Platinum Cup:
Complete Diamond Cup on Rookie.
Unlock Selection Cup:
Complete Diamond Cup on Rookie.
Unlock Pro Difficulty Setting:
When you have completed Sapphire Cup on the Rookie setting this difficulty becomes unlocked as an option.
