As well as basic movement directions, you also have the ability to boost in hungry shark evolution. You can see how much boost you currently have by looking at the red bar below your life indicator. Tap the screen in order to boost if you are using tilt mode, or, if you have it set to touch Controls, tap the screen with your other finger (so two touch the screen at the same time).
The boost is mainly used to speed up in order to catch fish that you otherwise might have missed. There are also certain fish which are quick and will require boosting to catch.
You can increase your boost to its maximum capacity by eating a sea turtle.

My laptops clicker only works if you want to click right or left at a time, does anyone know another way of doing it?
on a pc hold down the right click button. I just used it.
On my game it had been mapped to the up key, and I cant change it.
