An Infinite is a kind of robot or clone that's on Apocalypse's side. I'm finished the game already and in my replay of the game I haven't gotten as far as New York yet, so I can't answer your second question.

PS: You don't really need to know what an Infinite is, all you have to do in the game is kill them because they're not a major part of the game - or at least they don't play as big a role as Apocalypse or his Horsemen.You will be and you have been fighting them the whole way through the game so don't consider them important.
