I've noticed that small goldenfish sell off for a lot, but at the same time they can be used to create armor.
What should I do with them?

I'd save them, they are hard to come by and there's easier ways to get money, plus there is many weapons/armour small golden fish can be used for. But thats just me, so, good luck hunting!
Goldenfish can make some good armor. Save up till you got enouph then sell the rest of them if you want.
