Just press guard (X) and the directional button towards the enemy, just before getting hit by their attack. You'll need 1-2 bars of ki to pull this off, and I can't seem to do it for Ultimate attacks.
If you need practice, go to the Challenges list. I think they call it Discernment.
If you knock your enemy back into the air, press the are shoulder button and you'll do a Chasing attack, which will let you attack and teleport after your enemy. But every hit (up to 3) gives them more ki.
X+ (button to go backwards) or if this does not work please check your controls to set it to x and then the direction to backwards. If this does not work please ask jin. Not this website just go on jin's (the owner of the mod/game/video) because we may not know how to do it.
