It easy just try to block your self and try to hit her as fast as can
The easy way to do it it's to hide behind the big cement poles... That would block you from the witch and then try to hit her with your sword from behind the cement poles
Continue to hit her with your fists and force her to a wall. Then throw her into the wall and trow as many punches over her before she gets up. And do this till she dies.
Simply attack her a few times then when she begins to swing at you either dodge or counter her moves. When she attacks you from afar right before she reaches you do the counter move. If you began to get low on health, simply disengage your target and run around for a while and your health will slowly increase.
