Just as the name implies, Pokestar Studios are a movie studio in Unova at which Pokemon trainers -- and their Pokemon -- star in short movies that naturally emphasize the interaction between Pokemon and their trainer. This new addition to the series essentially replaces the Pokemon Musicals in the previous games.
Using prepared scripts that initially require you to use rental Pokemon that are provided by the studio, once you complete the challenges you can then use your own Pokemon, allowing you to attain higher scores in meeting the expectations of the script you are following.
The process of making the movies is something of a nod to the real world in that the shooting stage is entirely made of up a green-screen, with the actors wearing motion-capture suits, and the shooting following the script but with choices in dialogue to be made by the player that has a direct impact on the success of the movie. When the shooting is completed, the movie can be screened in the adjacent movie theater, with an audience present to rate it for you.
The movies are actually a collection of series, and as each is completed, another is unlocked. Performing well and scoring high results in higher revenue for the film as well as build your rank as a star. The better you do, the more hype is attached to the movies you make.

When you screen a movie you can speak with the fans you have unlocked as your rewards to receive gifts from them, the value of which depends on how well the movie did. These gifts include Berry Juice, Big Pearl, Energy Powder, Energy Root, Escape Rope, Favored Mail, Fresh Water, Healing Potions, Lava Cookie, Max Revive, Moomoo Milk, and Sweet Hearts, as well as other gifts.
While the goal for each script is to complete it in the best possible way, it is also possible to complete the movie in a way that is different than the intended "Bad" and "Good" fashion, which results in a "Strange" ending that has the effect of raising the fame of the Pokemon you used in it -- the effect of this is to add a special star animation to that Pokemon when it enters battles in future films, which is a rare effect.
Movies at Pokestar Studios are strictly voluntary after the first initial tutorial-type film you make as part of the story line in the game. While you do not have to do them, the fun that can be had in the process certainly makes it a desirable activity in the game.
